Green Long Bitter Gourd (Momordica charantia) is the classic long, dark green variety of bitter gourd most commonly used in Indian kitchens. It produces slender, deeply ridged, bitter fruits that are a staple in South Indian cooking — used in karela fry, stuffed preparations, and juice. Widely regarded as one of India's most medicinal vegetables. Known as Karela (Hindi: करेला), Kakara (Telugu: కాకర), Pavarkai (Tamil: பாவற்காய்), Paaval (Malayalam: പാവൽ), Haagalkayi (Kannada: ಹಾಗಲಕಾಯಿ), and Karle (Marathi: कारले). Regular consumption is traditionally linked to blood sugar management and liver health.
