Bottle Gourd (Lagenaria siceraria), also known as Lauki or Dudhi, is one of the most widely cultivated vegetables across India. Producing large, pale green, smooth-skinned fruits with soft, white, mildly-flavoured flesh, bottle gourd is used in curries, halwa, kootu, raita, and juice. It is exceptionally nutritious and easy to digest. Known as Lauki (Hindi: लौकी), Sorakaya (Telugu: సొరకాయ), Surai (Tamil: சுரைக்காய்), Churakka (Malayalam: ചുരക്ക), Sorekai (Kannada: ಸೋರೆಕಾಯಿ), and Dudhi (Marathi: दुधी). A highly productive, fast-maturing vine — a must-grow for every Indian kitchen garden.
