Carrot (Daucus carota) is a beloved root vegetable producing sweet, crunchy, orange tapered roots rich in beta-carotene, Vitamin A, and fibre. Grown across India in the cooler months, carrots are eaten raw, in halwa, curries, pickles, and juices. Home-grown carrots have far superior flavour to store-bought varieties. Known as Gajar (Hindi: गाजर), Gajjarlu (Telugu: గాజర్లు), Carrot (Tamil: கேரட்), Kaarat (Malayalam: കാരറ്റ്), Gajar (Kannada: ಗಾಜರ್), and Gajar (Marathi: गाजर). A cool-season crop — plant in October–November for a sweet, crisp harvest in January–February.

Avoid fresh manure (causes forking). Sunlight: Full sun to light shade Watering: Even, consistent watering; irregular watering causes splitting and forking Spacing: 5–10 cm apart after thinning Germination Time: 7–14 days Tip: Sow directly — root vegetables dislike transplanting.
